I don't know exactly. There has to be some balance that can be struck. On one hand not being pretentious is appealing and who is to say that you can't mix your side dishes how you like especially since you're probably paying good money for them.
On the other hand etiquette is there so everyone at the table can feel comfortable too.
Perhaps you could mention, say, the spoonfeeding episode, and you noticed that some people around the table were uncomfortable. Mention etiquette and ask him if he has given it any though or has ever learned some of the customary guidelines? See if you can have a conversation about it?
