If this is a new relationship and this is a major issue, I'd recommend ending it.
If not, I dunno, man. It sounds like this is only going to ramp up, eventually to an ultimatum of sorts, like: “You can't eat meat anymore, or else I'm leaving,” or, “You can't eat meat anymore around me, or else I'm leaving.”
If giving up meat isn't a big deal to you, consider that you might have to in order to maintain this relationship. Also consider that someone who demands that you change your entire diet to make them happy is probably not going to have a problem demanding that you change other things about yourself that they don't agree with (what kind of things you like to do in your spare time, what kind of career you want to pursue, whether or not you're religious/how you exercise your faith, who you hang out with, political beliefs, etc.).
