The real question is how are you still falling for this at 31?

Is she doing paintings because she can't afford other avenues? If so, as a replacement idea, maybe tell her making you your favoirte, or any chosen, dinner might be an alternative idea along with a movie or walk at a special place, anything involving quality time but not necessarily expensive.
If that isn't the reason maybe tell her that you like the paintings and appreciate the time and effort but don't have a lot of room and perhaps have other ideas for what you do have (in case she disputes it saying you have an empty or sparse area).
