Are your parents working with any tax/financial professionals? Lawyers, accountants, whatever? I'm kind of surprised they're unable to work out a payment plan for the taxes at least – the IRS is generally patient to a fault.
I think the line between helping them and hurting yourself really depends on the size of your current e-fund, what expenses you have outside of housing (since that's currently free), how much your student loans are and how stable your job is.
It is probably wise to assume that you may not get the money back, or you may get it back but not in time for your student loans in the fall. Make your plans with those assumptions in mind.
I'd probably ask to sit down with my parents & whatever financial professionals they're working with to understand the numbers, tell them I can give them some chunk of money tomorrow (which again will depend on the specifics of your situation) and that I can pay them X amount for rent going forward.
