Apparently, dad's way of coping was to replace your mother and do everything in his power to forget her. It could be that he is insensitive, certainly to your feelings. Or it could be the pain was too great for him to address it head on. Different people grieve in different ways. Since you guys have never had the conversation, it's nude to tell.
Your dad might view his new wife as the person that saved him when he was at his lowest. He might view her as an angel, which is why he wants to share her with you. His continued insistence on her being a mother to you is likely his clumsy way to have her heal you like he healed him.
All of this is speculative. And of course, you've been more than clear about your feelings towards all that. But if there is any- ANY path forward for you and your father, it requires you and he- and only you and he- to sit down and talk about exactly this.
