Um, a lot of the replies so far seem a little extreme.
It sounds like you've had your focus on other things most of your life. Academics, hobbies, etc. and are simply late to the dating world. That's completely fine.

I used to be like your girlfriend. My boyfriend is into boxing and calisthenics and I was worried about his health. But you know what I did? I sucked it up because he was passionate about it and he looked really depressed when I told him no. I had to come to terms with it and now I support him, while also reminding him to be safe about it. She needs to either suck it up, respect you, or for you to break up with you. Don’t allow her to hold you back from doing what you love. My boyfriend was firm with his hobbies and I eventually listened, she should too!
Some people are genuinely not in a good place for dating. It sounds like she is not able to make time for dating in her life.
