To be honest OP, I think she is saying more as a “wishful” thinking than as any sort of request. She is just plainly being open and honest with you but you may be premature leaping into the land of “oh my god she wants to sleep with a woman!”.
To give you an illustration. Back when I was much younger and all the way through to my early 30's I used to love smoking dope. It was a happy thing I did and for the times it was fine. I never abused it and my wife was ok with it. One day the kids were at an age where they started asking about “why does daddy go outside when we go to bed” so the decision was made (by me) to just not do it anymore. Did I miss it? I did but in all honesty I didn't miss it that much and over time it was just never again a part of my life.
Like your wife I do “miss” that occasional happy evening but it's a part of my life that is well and truly gone and that's it.
And I think that this is what she is telling you. It's that tinge of “it'd be nice” but knowing that it can never come back without causing more issues than it would be worth.
If you are of the mind to you can ask her further about it and explore as a couple what it may entail and what emotional and sexual boundaries could be bent or changed if she wanted to pursue that want, but in all likelihood she may just turn it down as that “it would be nice but the costs are not worth it.”
