This is a good outcome but do not rug sweep this. She has serious boundary and people pleasing issues that she needs to work on if she is to be a safe partner. I missed commenting on your OP, so here’s what I wanted to tell you:
There is cause for concern, but this doesn't appear to be a case of incompatibility. Rather, it is a case of your GF being vulnerable to manipulation by others. This is a boundary issue, not a poly issue.
She was away from home, and while developing a friend support system, ended up with a rather unethical couple. Yes, lots of poly folks will happily expound on the benefits of their relationship structure, but anyone who is ethical isn't going to push a friend, especially a friend with a partner who has no interest at all, into it. They talked a good game about how “evolved” they were and how much more “enlightened” their lifestyle is. She's probably got some people-pleaser in her.
So what to do? Both of you need to read Not Just Friends by Shirley Glass. Its about infidelity, and while its aimed at recovery, it is also a really good resource for preventing it through development of strong and healthy boundaries. She should look into some individual counseling to work on boundaries and people pleasing.
The positive here is that she responded to the boundaries that you asserted. BTW you asserted your boundaries really well – you didn't set an ultimatum, rather you stated what you would and would not stick around for.
