The whole “he needed a home” argument is really weak and almost laughable to me. You're just using that as an excuse to justify getting a dog despite knowing your girlfriend didn't want one. At this point, her reasons for not wanting one are also irrelevant. You should have identified this as a compatibility issue long before now and moved on. It's totally understandable that she's upset about this clear she's been making it clear she didn't want a dog. The fact you can't understand why seem understand why she's upset is probably the most concerning thing here.
I think the main problem here is that you did this by knowing your GF’s objections and her saying no multiple times. As you live! together, this is not your decision to make.
For instance, I do not like any type of pets, so I would not be with someone who has pets. I would share this info in the first date. But after dating, if my SO brings a pet to home without asking me and with knowing my objections, I would be very hurt and offended.
